Everybody Salsa
As we approach summer, it is time to start drinking day time margaritas on the patio with some chips and salsa. Wait... that isn't just a summer thing for me! I have tried multiple at home salsa recipes, and have given up on anything but the most simple version.
1 large tomato
2 medium tomatoes
1/2 onion
Cilantro
Jalapenos
Lime or lime juice
Spoonful of tomato paste
I used to be the person that would chop everything, but that is so time consuming and no one, not even during quarantine has time for that. Instead, I cut chunks of tomato and onion and throw into my Ninja blender. That's right, chop it up in the blender. I pull all the leaves of cilantro and throw that in the blender. Squeeze some lime juice or lime & the spoonful of tomato paste in. For some reason, jalapenos were hard to come by during quarantine, so keep it simple and get a can of sliced jalapenos. If using a small can, you can put all of them in, and if you buy a large can, I usually use about a quarter. BLEND. Jar and put in fridge.
The tomato paste was a solution after my brother, who believes he is a salsa critic told me that there was something missing. He liked the taste, but he was missing something. We narrowed down the something that was missing to a consistency thing. Added some tomato paste and he said "that must have been it." I have made every week for the last couple weeks.
